Jacques Dufilho's ancestors came from Gascony , in the South-West of France and several of them entered the pharmaceutical field. The most famous, Louis Joseph Dufilho (1788-1824) left his Mirande home early xix th century to settle in New Orleans , the United States , will open the Dufilho Pharmacy at 514 Chartres Street and become the first North American graduate pharmacist 2 . His brother Alexandre also settled across the Atlantic to become a gunsmith, until the Civil Warforces him to give up his business. The father of Jacques Dufilho (1883-1938) was also born in Mirande but did not attempt the American adventure: after his studies in pharmacy, he preferred to settle in his native village in 1906 then resell his pharmacy a few years later for become director of a chemical and pharmaceutical factory in Bègles ( Gironde ) 3 . With his wife Joséphine, he already had two children, Yvonne (1909-1985), who later took over his father's business, and André (1912-2003) who became a doctor at Mirande , then a writer at the end of his life.
Jacques Dufilho was born in the family home of Begles, south of Toulouse, a few months before the outbreak of the First World War in which his father was mobilized as a pharmacist in an ambulance and then to the production of combat gas 4 . His happy childhood was marked by the arrival of the Americans in Bordeaux in 1917 , a memorable memory in the eyes of the little boy 5 , the discovery of nature, botany and theater. When he moved with his parents to rue Brun, in Bordeaux, around the age of ten, he increasingly assisted his father, now director of a medical analysis laboratory, as an apprentice laboratory assistant. However, his serious temperament and his curiosity did not allow him to contemplate, like the rest of his family, long studies; a mediocre student, he only got good marks in drawing and in French, a discipline he enjoyed discovering through personal readings, notably the adventure novels by Jules Verne or Alexandre Dumas 6 . He painfully obtained his studies certificate , entered the Montaigne high school in Bordeaux and failed the. Encouraged by his father who could not bring himself to let him enter the Fine Arts , he joined a dental technician training for a year, before leaving to join the army, at the 2 nd hussar on horseback of Tarbes , for a period of eighteen months 8 . He went out as a sergeant .
Passionate about nature and the rural world since his childhood, his life punctuated by many family trips to the Gascon villages of his ancestors, Jacques Dufilho decided in 1936, at the end of his military service, to become a peasant . His ambition led him to first borrow money to acquire the castle of Mahout and his hundred hectares of land near the village of Ricourt , to cultivate the land 9 . If he did not manage to raise sufficient funds, he nevertheless acquired a pair of oxen and two cows with which he began his apprenticeship with local owners. Stubborn and happy at a task that was not yet that ofindustrial agriculture , the young boy developed a deep attachment for this trade which should follow him throughout his life 10 .
